Leek And Pea Salad

Ingredients:

  • 1 lb frozen peas defrosted
  • 1 clove garlic mashed
  • 1 tsp oregano
  • 2 tbsp olive oil

Directions:

  1. Cut leeks into chunks and blanch for 5 minutes.
  2. Drain well and allow to cool.
  3. Toss leaks with remaining ingredients and mix well.
