Lea's Cheesy Potato Soup

Ingredients:

  • 1 tbsp real butter
  • 1 small onion
  • 1 garlic clove
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp basil
  • 4 tbsp flour
  • 1/4 cup bacon bits
  • 1 (8 oz) bag frozen corn
  • 1 cup sour cream

Directions:

  1. In small bowl combine flour, salt, basil, and pepper.
  2. In large pot sauté onion and garlic in butter. Then stir in the flour mixture, be sure to mix well.
  3. Gradually add chicken broth and bring to a boil. Let boil for approx 2 minutes and then add the cubed potatoes, corn, and bacon bits.
  4. Let cook together until potatoes are fully cooked and falling apart.
  5. Then mix in the sour cream and cheddar cheese. Let simmer another 10 minutes or until cheese is melted.
  6. Serve garnished with chives if desired!
