Kurt's Potato Latkes

Ingredients:

  • 5 medium potatoes
  • 1 medium onion
  • 1/2 tsp salt
  • 1/8 tsp white pepper
  • oil

Directions:

  1. Peel potatoes; keep in cold water till ready to use.
  2. Shred onion on large holes of grater.
  3. Shred potatoes on small holes.
  4. Drain potatoes/onions in colander, pressing out excess liquid.
  5. Place in large mixing bowl, stir together with egg, flour, salt and pepper In 10” skillet heat about 1” of cooking oil.
  6. Drop in about 1T of mixture at a time for each latke.
  7. Cook over med heat till golden brown.
  8. Drain on paper towels (makes about 30 latkes).
