Ingredients:

  • 1/2 cup lettuce
  • 1 -2 slice tomato
  • 1/2 cup kumara
  • 1/2 tsp cinnamon (optional)
  • 1 tsp brown sugar (optional)
  • 3 tbsp oil
  • 1/4 cup bean sprouts

Directions:

  1. Preheat oven to 200°C; then on a roasting tray, spray lightly with oil or pour around 3 tablespoons of oil somewhere in the middle.
  2. On the up side of the Kumara slice, add any cinnamon, brown sugar and any other condiments you like (salt etc). Roast until soft with darkish edges.
  3. Toast your buns now if you want them toasted, then add your salad items on the bun. When you take the kumara out of the oven, you may want to put it on a paper towel to absorb some oil, just make sure it's a good one that's not going to break or leave fibers on your food.
  4. Serve whilst hot and enjoy!
