Kielbasa-Potato Soup

Ingredients:

  • 3 medium leeks
  • 5 tbsp butter
  • 5 medium potatoes
  • 2 lb kielbasa

Directions:

  1. In Large saucepan saute white portion only of 3 medium leeks (sliced) in 5 Tbsp butter until tender. Add approximately 9 cups chicken broth and 5 medium potatoes (peeled and diced).
  2. Bring to a boil then reduce heat and cover. Simmer 15-20 minutes until potatoes are tender.
  3. Stir in 2 lbs kielbasa (cut into bite sized pieces). Heat through. Just before serving stir in 2-4 cups fresh spinach.
  4. Servings.
