Ingredients:

Directions:

  1. Heat up a large frying pan with olive oil on medium high, while it is warming, cut up the veggies and kielbasa.
  2. Add them all to the pan at one time and saute.
  3. Cook uncovered for about 3 minutes, making sure everything does get coated with the olive oil while stirring.
  4. Cover pan and allow to steam, about 8-10 minutes. Stir every once in a while to make sure it doesn't burn.
  5. The veggies and the kielbasa will also be browning during this time.
  6. Uncover the pan and allow to fry for about 3-5 minutes, add drained corn if using at this time. (This step is burning off the liquid that the veggies release during cooking.) If some of the liquid is still there, its fine, just leave it in the pan.
  7. Add the barbecue sauce. I don't really measure the barbecue sauce, just squeeze it into pan. You don't want it soupy, just coating the ingredients.
  8. Serve immediately.
