Ingredients:

  • 2 cups flour
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 1/3 cup corn oil
  • 3/4 cup milk
  • 1/4 cup lime juice

Directions:

  1. Preheat oven to 400 degrees.
  2. Sift the first 4 ingredients together.
  3. Stir in the egg, butter, milk, limejuice, and peel, until just moistened.
  4. Fill paper-lined muffin tins full.
  5. Bake approximately 12-15 minutes (20 minutes may be too long)
