Ingredients:

  • 2 cups flour
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/3 cup milk
  • 1 tsp lime zest

Directions:

  1. Mix the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. Combine the milk, eggs, oil, lime juice and lime zest in a bowl and mix well. Add to the well in the center of the flour misture and stir just until moistened. Spoon into lightly greased muffin cups, filling 3/4 full.
  2. Bake at 400 degrees for 28 minutes or until light brown. Remove immediately from the muffin cups.
  3. *Place the muffin pans on a wet towel for no stick removal*
