Ingredients:

Directions:

  1. Wash tomatoes and place in large container.
  2. Boil hot water and pour over tomatoes to scald skin.
  3. Let tomatoes stand in hot water for 10-15 minutes.
  4. Pour off hot water and add ice water to help peel skin off tomatoes and chop to desired consistency.
  5. Chop all peppers and onions.
  6. In large cooking pot, add onions, peppers and spices, cooking for about 15 min add chopped tomatoes and tomato sauce.
  7. Add sugar to taste.
  8. Cover and slow cook for approximately 2 hours.
  9. If salsa is too thick, just add addtl tomato sauce/water mix.
  10. Taste to see if more spices are need and add to taste.
  11. Place in canning jars after cooling.
  12. Tastes really good when still hot.
  13. Serve with tortilla chips.
