K & B's Sausage Starter Mixture

Ingredients:

Directions:

  1. You must use UN-iodized salt.
  2. Mix powdered milk with water.
  3. Put garlic cloves in blender or chopper and add about 1/2 cup of water.
  4. Mince the garlic in the water and reserve but do not strain.
  5. Mix all three meats together well.
  6. Add all seasonings and mix well.
  7. Add 1/4 cup garlic water and mix well.
  8. Add all of milk and mix well.
  9. Let rest for about 15 minutes.
  10. Mix again.
  11. If mixture is very sticky add more garlic water.
  12. Mix well and let sit for another 10 minutes.
  13. You want sausage to be sticky but not dry.
  14. Take a small tablespoon of meat mixture and fry in till done.
  15. Taste for seasoning adjustments. Adjust as needed.
  16. When you get to what you like freeze in freezer bags.
  17. You may also stuff casings with this if desired.
