Directions:

  1. Boil potatoes. Drain, season with SP and mash. Let cool.
  2. Place 1/4 cup flour on a plate. Season pork with salt and coat with flour. Heat skillet with PAM. Add pork and cook for 2 min/side. Transfer to a work surface.
  3. In the same skillet, add some water and onion and cook until softened. Stir in remaining flourand cook 1 min. Stir in broth and olives and cook until thickened, 2 min. Finely chop pork, stir into skillet and season with SP. Let cool 15 min.
  4. Heat oven to 350. Place breadcrumbs on a plate, beat eggs in a bowl. Divide potato into 4 portions. Shape each portion into a cup. Fill with 1/4 of pork mixture and shape potato around to form a ball. Coat with breadcrumbs, turn in egg and coat with more breadcrumbs.
  5. Bake until browned.
