Ingredients:

  • jordan marsh blueberry muffins
  • 1/2 cup butter
  • 11/4 cup sugar
  • 2 cups flour
  • 2 eggs
  • 1/2 tsp salt
  • 1/2 cup milk

Directions:

  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl, cream together butter and sugar until light and fluffy; add eggs, one at a time, beating after each addition.
  3. In a second bowl, combine all dry ingredients.
  4. Gradually add the dry ingredients to the creamed butter and sugar mixture along with the milk and vanilla.
  5. Optional, mash 1/2 cup of the blueberries, and stir in by hand (this will turn batter a light shade of blue and add a touch of blueberry flavor) but this step may be skipped, if you wish If using frozen blueberries, sprinkle with flour - stirring by hand - add rest of blueberries and stir.
  6. Gently by hand.
  7. Grease and flour muffin tins or use paper cup liners..
  8. Bake at 375° for 25-30 minutes for regular size muffins.
