Joanne's Peanut Butter Pie

Ingredients:

  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1 2/3 cups milk
  • 6 tbsp flour
  • 1/4 cup peanut butter
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 6 tbsp sugar

Directions:

  1. Crust: mix powdered sugar and peanut butter until crumbly. Spread 2/3 of the crumbs into a 9 shell. Set aside remaining 1/3 for top.
  2. Filling: mix sugar, milk, flour and salt in a saucepan. Cook until thickened. Can be put in a bowl and cooked in the microwave until thickened also. Then add beaten egg yolks and peanut butter. Cook again until thicker. Add vanilla and mix. Pour over crumbs in pie shell.
  3. Topping: mix egg whites and sugar til slightly stiff. Pour over top of pie. Sprinkle with remaining crumbs.
  4. Bake at 400 degrees for 10 min or until brown.
  5. Cool completely.
