Ingredients:

Directions:

  1. Preheat oven to 325 degrees F.
  2. Generously grease and flour 2- 9 inch cake pans.
  3. A 10 inch tube pan works well also.
  4. Line with waxed paper for easy release.
  5. Combine the oil and sugar. Mix well.
  6. Sift the dry ingredients together.
  7. Add half of flour mixture to the sugar/oil mixture.
  8. Add the rest of the flour mixture with the eggs, beating well after each addition.
  9. Add the carrots and mix well.
  10. Fold in the pecans. (TIP: before adding the nuts to the cake, toss the nuts around with a small amount of flour so they won't sink to the bottom of the cake)
  11. Bake for 1 hour 10 minutes(or until toothpick inserted comes out clean)
  12. Cool completely on racks.
  13. Remove the waxed paper.
  14. Frost with your favorite cream cheese frosting.
