Ingredients:

Directions:

  1. Cook sausage in pan over med-high heat til mostly cooked, add garlic, onion, and celery and continue cooking til sausage is browned and liquid evaporates. Drain the last bit of juice if you like to lower the fat content.
  2. Add in the peas, lemon juice, and sun dried tomatoes (or paste & sugar) with 1 1/4 cup water, bring to boil, then lower to simmer for 10-15 minutes (the time it takes to cook brown rice!)
  3. Add parsley and pepper to taste
  4. Adjust seasonings as needed to make it hot or mild or cut the tartness of the tomato with a pinch more sugar
