Directions:

  1. Slice zucchini and onion and parcook separately in the microwave.
  2. Do not over cook zucchini slices, you want them to be a little crunchy in the finished product.
  3. In a casserole or baking pan, depending on the quantity you're making: place a layer of zuchhini and then a layer of onion
  4. Pour some tomato sauce over the zucchini and onion, you don't have to cover it completely
  5. Sprinkle some Italian Seasoning over the tomato sauce to your taste
  6. Sprinkle a good amount of cheese over the Italian Seasoning and then repeat layers until zucchini and onion are used up.... ending with cheese.
  7. Bake at 350 for 45 minutes to an hour or until hot and bubbly
