Ingredients:

Directions:

  1. Spray bottom of soup pot with pam,
  2. Brown sausage with garlic, stirring so sausage dosen t stick
  3. Stir in broth, tomatoes and the carrots
  4. Season with salt and pepper to taste
  5. Cover and simmer 20 minutes
  6. Stir in beans with the liquid from the cans and the zucchini
  7. Cover and simmer 20 minutes or until zucchini tender
  8. Add spinach soup is ready when spinach gets soft , about 3 minutes ( If using defrosted frozen spinach) it takes about 5 minutes to warm the spinach
  9. When eating, sprinkle parmesan cheese on top
  10. Serve with a crusty loaf of warm bread!!! Perfect winter meal!
