Irish Stew With Guinness, Potatoes and Sausage

Ingredients:

Directions:

  1. Quarter the potatoes, and blanch until just tender.
  2. Brown sausage and bacon.
  3. Sauté garlic, onions, potatoes, and mushrooms in butter.
  4. Place the sausages, bacon, and vegetable mixture in large pot.
  5. Add the broth and Guinness stout and bring to a simmer.
  6. Cover and simmer at least 1 hour.
  7. Finish with thyme, salt, pepper, and butter.
  8. Serve as a stew with Irish soda bread or other hearty bread.
