Directions:

  1. In a medium pot, cook carrot and onion in EVOO for 2-5 mins, or until the onion is somewhat translucent and carrot is slightly soft
  2. Add the rest of ingredients, bring to boil, reduce to simmer, and simmer, covered, for 45 minutes, until lentils are fully cooked
  3. Add dollop of yogurt, if desired, and enjoy.
