Ingredients:

Directions:

  1. Slice tomato and avocado.
  2. Squeeze the lime juice over the avocado to prevent browning.
  3. Slice onion very thinly.
  4. Shred cheese.
  5. Line up these ingredients by the stove, along with salt and pepper and salsa.
  6. Warm 2 oven proof individual casserole dishes in your oven.
  7. Heat the oil in a small skillet.
  8. Fry the tortillas in oil, turning once with tongs until lightly brown and crisp.
  9. Remove to warm dishes in oven.
  10. Dump out oil (in a can, not down the sink drain.)
  11. Melt butter and prepare eggs in favorite method, sunny side up, over-easy , or scrambled.
  12. Place eggs on top of tortillas.
  13. Salt and pepper and then add the toppings of tomato avocado, salsa, onion and cheese.
  14. Run under the broiler until the cheese melts.
  15. Serve immediately.
