Hubbys Honey Roasted Pumpkin Soup

Ingredients:

Directions:

  1. Chop up your pumpkin , capsicum and onion
  2. Place into a roasting dish
  3. Cover with a little oil and the honey
  4. Sprinkle over the curry powder and roast.
  5. Pile roasted veg into a pot,
  6. Deglase the roasting pan with a little water and add
  7. Top up with veg stock to however much you need
  8. Use a stick mixer to blend to a smooth consistancy
  9. Add the cream and reheat
  10. Awesome with Garlic and herb monkey bread.
