Hot Sweet Potato Salad

Ingredients:

  • 1 tbsp sugar
  • 1 tbsp oil
  • 3 slices bacon
  • 1/2 cup red onion
  • 1/4 cup apple jelly
  • 1/4 cup pecans
  • 2 tbsp lime juice
  • 2 tbsp green onions

Directions:

  1. Pre-heat oven to 425 deg.
  2. Toss potatoes with sugar, oil, salt and pepper.
  3. Roast at 425 deg. for 25-30 minute on a jelly roll pan.
  4. Saute bacon til crisp and add onion. Saute for 3 minute.
  5. Add jelly and vinegar til it melts. Remove from heat.
  6. Toss with bacon, pecan, lime and green onion.
  7. Season with salt and pepper.
