Hot Chocolate with Citrus, Cinnamon and Brandy

Ingredients:

  1. In a large saucepan, combine the half-and-half, cinnamon stick, orange zest and brown sugar. Place over medium heat and bring to a simmer (but not a full boil), stirring constantly. Turn off the heat and keep warm.
  2. In a double boiler (or bowl set over a pan of simmering water) over low heat, melt the chocolate. Using a sieve, strain the half-and-half mixture into the chocolate, whisking constantly until smooth. Remove from the heat and stir in brandy. Divide among 8 mugs and serve immediately.
