Honey Crunch Pecan Pie

Ingredients:

  • 4 medium eggs
  • 1/4 cup brown sugar , firmly packed
  • 1/2 tsp salt
  • 2 tbps. butter or 2 margarine, melted
  • 1/3 cup brown sugar , firmly packed
  • 3 tbps. butter or 3 margarine
  • 3 tbsp honey
  • 1 1/2 cups pecan halves

Directions:

  1. Heat oven to 350°F.
  2. FILLING: In a mixing bowl, combine eggs, brown sugar, granulated sugar, salt, corn syrup, melted butter, vanilla extract, and pecans; mix well.
  3. Spoon into unbaked pie shell; bake 15 minutes. Cover edge of pastry with foil; bake 20 minutes longer.
  4. TOPPING: In a medium saucepan combine brown sugar, butter and honey; cook 2-3 minutes on medium heat until sugar is dissolved and butter is melted. Remove from heat.
  5. Add nuts; stir until coated. Spoon evenly over pie. Cover edge of pastry with foil.
  6. Bake 10 minutes or until topping is bubbly and golden brown. Cool to room temperature before serving.
