Homemade Ciabatta Bread

Ingredients:

  • 2 packages of yeast
  • 1 1/2 cups hot water
  • 3 1/4 cups of bread flour
  • 1 tsp of salt
  • 1/2 tsp of sugar
  • 1 tbsp of olive oil

Directions:

  1. Fill small bowl with hot water. Add the yeast and stir well. Let stand 5 min.
  2. Meanwhile, in large bowl mix flour with the salt and sugar.
  3. Stir yeast into center of flour mixture. Use a spoon to stir and add in the oil. Mix until gathered and then use hands to shape the dough into a soft and slightly sticky ball. (Add more flour if dough is too sticky)
  4. Place dough on floured workable surface and knead for about 10 min. (Dough should be smooth and springy)
  5. Place dough in large bowl and cover to rise in warm place for 40 min. (Dough should double in size) Gently use hand to deflate the dough. Split dough into two pieces. Shape dough into small balls. Cover and set aside for 30 min.
  6. Grease and flour a cookie sheet. Stretch dough into a rectangle shape that is about 1 inch thick.
  7. Place dough on cookie sheet, cover and let rise additional 30 min.
  8. Heat oven to 375 degrees. Bake loaves for 35-40 min. until top is golden brown. Remove from cookie sheet to wire rack and let cool.
  9. Slice and enjoy!
