  1. Generously grease a 9-inch pie plate with the 1 tablespoon butter or margarine; set aside. In a small bowl combine flour, baking powder, and salt. In a large mixing bowl beat eggs and orange extract, if using, by hand until foamy. Stir in sugar. Add flour mixture, stirring until well combined (mixture will be stiff). Stir in apples, pecans, and raisins. Spread evenly in greased pie plate.
  2. Bake in a 325 degree F oven about 50 minutes or until golden brown and center appears set. Serve warm. To serve, cut into wedges and top with whipped topping and apple slices, if desired. Makes 6 to 8 servings.
