Holiday Pumpkin Bread

Ingredients:

  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 cup pumpkin
  • 1/2 cup olive oil
  • 1/4 cup water
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • walnuts (optional)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Sift together flour, salt, sugar and soda.
  3. Mix the pumpkin, olive oil, eggs, water, nutmeg, cinnamon and allspice.
  4. Combine the two mixes (not to thoroughly).
  5. Stir in walnuts* (*Optional and should be chopped).
  6. Pour batter into well buttered pan.
  7. Bake 50-60 minutes until toothpick comes out clean.
  8. Turn out of pan and let cool on rack.
