Hiyashi Soba (Cold Noodles)

Ingredients:

  • 2 1/2 cups water
  • 1/2 cup mirin
  • 4 tsp leeks, sliced thinly
  • 4 tsp nori , cut into strips

Directions:

  1. Boil water, soy sauce and mirin. Allow to cool and place in the refrigerator.
  2. Cook soba according to package instruction.
  3. Wash soba in cool running water.
  4. Place soba in bowl and garnish with ginger, leeks and nori.
  5. Pour cold broth over the noodles.
  6. Add wasabi according to taste.
