  1. Prepare charcoal fire in smoker, and let burn 10 to 15 minutes. Sprinkle wet hickory chips over grey-white coals. Place water pan in smoker, and fill with hot water.
  2. Place lower food rack on appropriate Shelf in smoker. Place ribs on shelf; cover with smoker lid, and cook about 3 1/2 hours. Remove lid, and baste ribs with barbecue sauce during last 5 minutes of cooking; replace lid immediately after basting. Serve rem ining sauce with ribs .
