Ingredients:

  • 1/2 cup applesauce
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 4 eggs
  • 1 1/2 cups flour
  • 3/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1/8 tsp cardamom
  • 1/2 cup buttermilk or 1/2 cup plain yogurt

Directions:

  1. Heat oven to 350 degrees. Grease and flour the bottom of two 9 inch pans.
  2. In a large bowl cream butter and sugars. Add vanilla, eggs and mix. Add applesauce and pumpkin. In separate bowl whisk together the dry ingredients. Add half to pumpkin mix blending well. Add buttermilk or yogurt and blend. Add remaining flour mix and beat until smooth. Stir in walnuts.
  3. Pour into pans and bake for 60 - 65 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes and remove from pan.
