Ingredients:

  1. 1. In non-stick pan, sauté red bell and green onion with 1 tablespoon oil until tender and browned. Place in large bowl and let cool.
  2. 2. Add package of Simply Potatoes Shredded Hash Browns to bell and onion mixture.
  3. 3. Also add spinach, both Goat & Cheddar cheeses, and eggs.
  4. 4. Get your CLEAN hands dirty: mix the ingredients in the bowl evenly and divide into 6-8 portions.
  5. 5. Heat oil in non-stick pan, medium-high heat.
  6. 6. Gather a portion of hash mix, round, then flatten into pan.
  7. 7. Let cook 8-10 minutes on each side, or cook until desired crispness.
  8. 8. Serve with toppings of preference. I like with fresh tomato Ü
  9. 9. Serve. Eat. & Enjoy!
