Directions:

  1. In a dutch oven or soup kettle, saute celery and onion in oil until tender.
  2. Add remaining ingredients; bring to a boil over medium heat.
  3. Reduce heat; simmer for 25-30 minutes or until tender.
  4. Discard bay leaf.
  5. Cool slightly.
  6. In a blender or food processor, process soup in batches until smooth.
  7. Return all to pan and heat through.
  8. Yield: 4 servings.
