Hamburger/Hot Dog Buns for a Crowd

Ingredients:

  • 5 lbs flour
  • 8 oz sugar
  • 1 1/4 oz salt
  • 1 1/2 cups milk
  • 3/4 oz dry yeast
  • 1 quart warm water

Directions:

  1. Using industrial mixer:.
  2. Combine dry ingredients: flour, sugar, salt and dry yeast.
  3. Add shortening.
  4. Heat the milk and water to a warm state.
  5. Add both to dry ingredients; mix well.
  6. Let mix for approximately 5 minutes.
  7. This will activate the yeast to bring out the gluten in the flour.
  8. Turn out onto floured board and cover and let rise to twice its size.
  9. Cut dough into 5 1/l2 lb. balls. Let rise again.
  10. Then, divide into 36 balls.
  11. Can use as hamburger buns or roll to make hot dog rolls.
  12. Arrange onto baking sheet with parchment paper.
  13. Bake at 350° till golden.
