Ham 'n' Eggs Brunch Casserole

Ingredients:

Directions:

  1. Grease a 2-quart covered casserole.
  2. Stack 3 bread slices; cut into long strips and then into cubes.
  3. Continue with remaining bread to make 6 cups of bread cubes.
  4. In a medium skillet, melt butter over medium heat.
  5. Add pepper and onion; sauté until softened but not browned, about 5 minutes.
  6. Transfer pepper and onion to the prepared dish.
  7. Add bread and Canadian bacon; stir to combine.
  8. In a medium bowl, combine eggs and milk; using a fork, stir mixture until well blended.
  9. Pour egg mixture over bread mixture.
  10. Cover casserole; let stand 1 hour at room temperature or chill overnight.
  11. Preheat oven to 325°F.
  12. Bake casserole covered, for 30 minutes.
  13. Uncover and bake 30 minutes longer.
  14. Garnish with thyme and serve immediately.
