Ingredients:

Directions:

  1. Preheat oven to 325 degrees
  2. Grease an 8x10x2 Glass baking dish with 1 tablespoon of butter.
  3. In a bowl,beat remaining butter with sugar until light and fluffy.
  4. Add eggs,1 at a time,beating well after each addition.
  5. In a large measuring cup,combine milk and water.
  6. Divide rice flour into 3 batches.
  7. Add one-third flour to batter,stir well.
  8. Add half of liquid and stir in before adding another one-third of flour.
  9. Stir to blend.
  10. Add remaining liquid,blend,and then add remaining flour.
  11. Stir until batter is smooth.
  12. Fold in 3 ounces of coconut.
  13. Pour batter into baking dish,bake 10 minutes.
  14. Remove from oven,sprinkle remaining coconut evenly over top.
  15. Return to oven and continue baking until top is light brown,about 50 minutes longer.
  16. Remove cake from oven and let cool completely.Cut into squares to serve.
