Grilled Tomato, Basil, and Goat Cheese Sandwiches

Ingredients:

Directions:

  1. Prepare barbecue (medium heat).
  2. Cut baguette crosswise in half.
  3. Cut each half lengthwise in half to form 4 pieces total.
  4. Combine oil, garlic, and herbs in small bowl.
  5. Brush all cut sides of bread with half of oil mixture.
  6. Grill bread, cut sides down, until lightly toasted, about 1 minute.
  7. Remove from grill.
  8. Quickly spread cut sides of toast with goat cheese.
  9. Top with tomatoes and olives, dividing equally.
  10. Drizzle remaining oil mixture on top.
  11. Return open-face sandwiches to grill.
  12. Cook until bottom sides are toasted, cheese melts, and tomatoes begin to soften, about 3 minutes.
  13. Cut each sandwich diagonally in half and serve.
