Grilled Pizza

Ingredients:

  • 1 (1/4 oz) package active dry yeast
  • 1 1/2 cups lukewarm water
  • 3 1/2-4 cups flour
  • 2 tsp salt
  • 1 tbsp olive oil

Directions:

  1. Dissolve the yeast in the water.
  2. Combine 3 1/2 cups flour with the salt on a work surface. Make a well and add the yeast mixture and olive oil.
  3. Knead the dough 5 to 8 minutes until smooth and no longer sticky, adding additional 1/2 cup flour as needed.
  4. Place the dough in a large oiled bowl. cover with a towel and put in a warm place for 2 to 3 hours or until the dough has doubled.
  5. Remove dough from the bowl, punch down and divide into 8 even balls. Flatten each ball on a lightly floured surface and roll or stretch into a thin 8 round. Place the rounds on a lightly floured tray. Cover with a towel and let the dough rest 20 minutes.
  6. Brush olive oil on both sides of pizza and grill dough directly on the grill for approximately 1 minute. Turn and grill for another minute, then remove to a cutting board. Repeat with remaining dough.
  7. Top as desired and serve.
