Ingredients:

  1. Using a medium bowl, mix together the yogurt and eggs with the biscuit baking mix.
  2. On medium heat, use a medium-sized skillet to heat the oil.
  3. Stir fry the onion, and the green and red bell peppers until it is tender and stir it into the batter.
  4. Use a frying pan (or griddle) and oil it lightly and put it on medium heat.
  5. Using a 1/4 cup for each pancake, transfer the batter on the griddle.
  6. Brown the pancake on each side. Serve it up hot and garnish it with parsley and tomatoes. Have a wonderful breakfast!
