Green Beans With Bacon

Ingredients:

Directions:

  1. Trim the ends of the beans & snap into 2 inch pieces.
  2. In a 3 quart saucepan, place the beans, water & salt.
  3. Bring to a boil.
  4. Reduce heat to low; cover & simmer 10-15 minutes or until crisp-tender.
  5. Drain well & keep warm.
  6. Meanwhile, cut the bacon into 3/4 inch pieces.
  7. Fry in a medium skillet until desired doneness.
  8. Remove bacon & drain on paper towel.
  9. Discard all but 1 T. of the bacon drippings.
  10. Saute' the onion in the drippings over medium heat for about 10 minutes or until soft.
  11. Stir the cooked bacon, onion & pepper into the beans & heat thouroughly.
  12. Top with the diced tomato & serve.
