Greek Style Potato Salad

Ingredients:

Directions:

  1. Boil potatoes in a large pot of boiling water. Cook until tender.
  2. Drain potatoes, allow to cool.
  3. In a small bowl, dissolve sugar in the lemon juice. Mix together with the olive oil, yogurt, salt, and pepper until well combined.
  4. Place cooked potatoes in large bowl, scatter the scallions, capers, olives, feta cheese, and dill on top and toss gently. to combine.
  5. Drizzle the yogurt dressing over the top, mix to evenly coat the potatoes.
  6. Serve.... and enjory.
