Greek-Roasted Rutabaga

Ingredients:

  • 1 large rutabaga, peeled and cut into 2-inch pieces
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/8 tsp pepper

Directions:

  1. Toss together all ingredients, and spread into a lightly greased 15- x 10-inch jellyroll pan.
  2. Bake at 450° for 25 minutes; stir mixture, and bake 25 more minutes.
