  1. Boil softened beans in large heavy pot with at least 8 cups of water at high heat, uncovered; remove froth during initial boiling; stir frequently after first hour of cooking as soup thickens. Add boiling water if needed.
  2. After about 1.5 hours, when beans have softened and soup has thickened, add in the dry herbs, stir, add more boiling water if needed, and continue cooking after lowering heat to medium high; monitor thickness and stir to be sure beans do not stick to bottom of pan.
  3. After beans have boiled for two hours, reduce heat to very low and cover pot to keep beans at a slow simmer.
  4. In a small frying or saute pan, heat olive oil at medium heat and then add in the finely sliced onion and the remaining spices.
  5. Stir frequently while onions are browning to distribute spices throughout.
  6. When onions have become soft and almost translucent, pour the contents of the small pan into the bean pot, stir, and allow to simmer for 5 minutes to blend flavors.
  7. Remove pot of beans from heat and allow to cool a few minutes before serving.
  8. Suggested serving size is 6 oz. or 3/4 cup of beans, served with rice.
  9. NOTE: This recipe has NO SALT added. If a more interesting flavor is desired, you can add 1/2 tsp. sea salt PLUS the following: 1-2 tsp. freshly squeezed lemon juice, 1 tsp. brown sugar, and, if available, 1/4 cup of fresh coriander leaves (stems removed), chopped finely. Add these ingredients at the very end and stir. The final taste would then be more similar to an Indian dal.
