Ingredients:

  • mellow dough
  • 1 cups flour
  • 1/4 lb butter
  • 1/2 cup sugar
  • 1 egg
  • pinch of salt
  • 2 lbs plums
  • 1/4 cup sugar
  • 1 tsp cinnamon

Directions:

  1. Prepare the dough:
  2. Mix all the ingredients for mellow dough and, on a bread board, knead to a supple dough. Roll out and use as instructted in the specific recipe. In view of the large butter content of this dough, it should be thoroughly cooled before baking.
  3. Prepare a cake tin with baking parchment. Roll out the chilled dough and line the baking pan.
  4. Pit the plums and arrange in a cirle on the dough. Sprinke with sugar, cinnamon and almonds.
  5. Bake in a fairly hot (375) oven for 30 minutes.
