Granny Z's Pumpkin Cake With Cream Cheese Frosting

Ingredients:

  • 4 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 (15 oz) can pumpkin
  • 2 cups cake flour
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp clove
  • 1/2 tsp nutmeg
  • 1 (8 oz) package cream cheese
  • 1/2 cup margarine or 1/2 cup butter
  • 1 tsp vanilla

Directions:

  1. Beat together eggs, oil, sugar and pumpkin.
  2. Sift together cake flour, baking powder, baking soda, salt, cinnamon, ginger, cloves and nutmeg.
  3. Add sifted ingredients to pumpkin mixture.
  4. Mix well.
  5. Grease and flour jelly roll pan.
  6. Pour into pan and bake 25-30 minutes at 350 degrees.
  7. Frosting: Mix cream cheese, margarine, powdered sugar and vanilla together well.
  8. Cool cake completely before frosting.
