Granny Doria's Rhubarb Pie

Ingredients:

  • 1 1/3 cups sugar
  • 1 pinch salt
  • 1 tbsp flour
  • 1 tsp orange zest
  • 2 eggs
  • 3 1/2 cups rhubarb, cubed
  • 1 tbsp flour
  • 1 tbsp sugar

Directions:

  1. Beat first 6 ingredients until smooth.
  2. Add rhubarb to the mixture.
  3. Sprinkle 1 T. flour and 1 T. sugar on the bottom of the crust.
  4. Add rhubarb mixture to the pie crust.
  5. Make lattice strips with the 2nd pie crust.
  6. Top with lattice.
  7. Bake at 450 degrees for 10 minute then bake at 350 for about 30 minutes.
