Ingredients:

Directions:

  1. Preheat oven to 400.
  2. Coat muffin tins with nonstick cooking spray.
  3. In small bowl, combine apple, raisins, spice and 2 tablespoons flour.
  4. In a large bowl, combine remaining flour, baking powder, baking soda, salt and sugar.
  5. Make well in center of mixture.
  6. In a separate bowl, combine yogurt, orange juice, oil, almond extract and egg.
  7. Stir it and apple mixture into flour mixture until dry ingredients are just moistened.
  8. Fill prepared muffin tins three-fourths full.
  9. Bake in preheated oven 15 minutes or until toothpick inserted in center comes out clean.
  10. Remove from pan immediately.
