Glazed Chicken, Potatoes and Broccoli

Ingredients:

Directions:

  1. Remove broiler pan from oven; place oven rack 6 inches from broiler.
  2. Heat broiler.
  3. Fill a 3-Quart saucepan with 1/2 inch water; cover.
  4. Place the saucepan and a large nonstick skillet over medium-high heat.
  5. Heat oil and butter in skillet; add potatoes and cook 5 minutes per side until browned.
  6. Sprinkle with 1/4 teaspoon salt and pepper.
  7. Meanwhile line broiler pan with foil; lightly coat with nonstick spray.
  8. Place chicken on foil, skin side down; broil 4 minutes per side to heat.
  9. When water boils, add broccoli, cover and cook 5 minutes or until crisp-tender.
  10. Drain; sprinkle with 1/4 teaspoon salt.
  11. Glaze: Mix all ingredients in a small bowl.
  12. Brush on both sides of chicken.
  13. Broil skin side up 2 minutes or until glazed.
  14. Serve with potatoes and broccoli.
