Gingerbread Waffles with Orange Sauce

Ingredients:

  • 2 1/4 cups flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 egg , sperated
  • 1/2 cup milk
  • 1/3 cup butter or 1/3 cup margarine, melted
  • 2/3 cup sugar
  • 2 tbsp cornstarch
  • 1/2 cup orange juice
  • 1 tbsp orange zest
  • 1 tbsp butter or 1 tbsp margarine
  • 1/8 tsp salt

Directions:

  1. Combine flour, ginger, soda and salt.
  2. Beat egg yolk; add molasses, milk, melted butter and mix well.
  3. Beat egg white until stiff peaks form.
  4. Fold into batter.
  5. Bake in preheated waffle icron according to manufacturers directions.
  6. Serve with ice cream and orange sauce.
  7. Orange Sauce:.
  8. Combine sugar and cornstarch in a medium pan.
  9. Stir in orange juice and zest.
  10. Add boiling water.
  11. Heat and stir until thickened and smooth.
  12. Add butter and salt.
