  1. Break up matzo sheets into pieces the size of a quarter or half-dollar
  2. Place them into an 8-by 8 inch baking pan
  3. Heat the apple juice or cider to boiling and pour it over the matzo, Allow the matzo to soften well, about twenty minutes
  4. Break eggs into a large bowl and stir well, until fully mixed. They should be a uniform color
  5. Drain the excess liquid from the matzo. If there is much liquid runoff, re-heat the liquid and re-soak the matzo, until nearly all the liquid is absorbed
  6. In a ten- or twelve-inch iron skillet, melt 1/3 to 1/2 cup sweet butter, until it just begins to smoke
  7. Add the matzo-egg mixture, 1 cup at a time, until the bottom of the pan is covered to a depth of 1 inch
  8. Reduce heat to about 1/2 full, or as hot as you would for a regular omelet
  9. Cook until the mixture begins to be firm enough to turn over, but not too hard. It should resemble a giant pan-cake
  10. Flip the cake over in the pan, adding more butter , if necessary
  11. Fry until firm, but not hard
  12. When done, remove from pan, and serve
  13. Drizzle with maple syrup and/or apple sauce
  14. Eat! Enjoy! Look how you look! You're skinny as a rail. Take another piece, you eat like a bird. Don't get fresh to your mother.
