Garlicky Tomato Soup

Ingredients:

Directions:

  1. In a medium stockpot, heat oil.
  2. Saute the onion and garlic for 5 - 8 minutes or until soft and starting to turn golden.
  3. Add tomatoes and cook for another minute or two, then add the stock and pureed tomatoes and bring to a boil.
  4. Reduce the heat to medium low and simmer for 20 - 30 minutes.
  5. Add sugar and seasonings. Remove soup from the heat and puree in the pot using a hand held immersion blender, or transfer in batches to a blender to puree until smooth.
  6. Blend in cream.
